I am a legitimate oatmeal cookie monster... I just counted, as well as January 2018, I've shared 47 oatmeal cookie recipes with you. Eep! Have you tried any of these yet? (? You can locate all my oatmeal cookie recipes directly there!) They're a few of the most popular recipes in my website because they taste very sweet and cozy, exactly like traditional"indulgent" oatmeal cookie recipes, but they include no refined flour or sugar!
That means you're going to start with whole wheat flour (or gluten-free, if you like ) and instantaneous oats (such as these... or these for a gluten free version!) . Immediate oats are thinner and smaller than conventional rolled oats, and you may locate them in canisters right alongside those old-fashioned oats in the grocery shop.
I probably sound like a broken record by now... But cause I ? you and also need your cookies to flip out totally plump and soft, I'm reminding you ... Measure your yogurt and bread correctly, using this method or even a kitchen scale! (? That is the one I have and love. A lot of either ingredient will make your biscuits taste cakey or sterile, rather than chewy. This is particularly true of this oats--that they act like little sponges and consume plenty of moisture out of your cookie dough!
Ripe bananas- perfect for baking! Love all of @amybakeshealthy's yummy & healthier banana recipes!
See those bananas? And all of those brown stains? When it comes to baking with bananas, brown = beautiful! I ? extra speckly bananas because they have so much bright, bold taste --along with additional natural sweetness! That's the minimum number of brown which I suggest. More is better!
The remaining portion of the cookie dough's sweetness comes in another pure ingredient... Pure maple syrup (such as this!) . You want the sort that comes straight from pine trees, which is typically offered in skinny glass bottles or squat, round plastic jugs. Skip the pancake sugar and sugar!

The raisins add much more sweetness! The freshly bought, extra plump, perfectly soft ones are perfect... But if you have older, somewhat dried out carbohydrates (hmm... it sounds absurd to describe dried fruit as dried out! ) , that is okay!
Simply add them to some microwave-safe bowland pour water on top until they're totally covered. Seal plastic wrap over the surface, and microwave the bowl on high for 1 minute. Should you allow the peppers sit mixing together the cookie dough, then this little hint hydrates them they're exceptionally succulent --and that makes a big difference in these cookies once they're baked!

Healthy Banana Oatmeal Raisin Cookies
Yields: 15 biscuits
The familiar comfy spices and plump raisins make these much more irresistible. They will keep for a minumum of one week if kept in an airtight container in the refrigerator--should they last that long!
1 cup (100g) instant oats (fermented if needed and quantified like this)
3/4 cup (90g) whole wheat or fermented * flour (measured like this)
1 1/2 tsp baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract
In a medium bowlwhisk together the yogurt, milk, baking powder, cinnamon, and salt. Add the flour mixture, stirring only until incorporated. Fold in the raisins.
Preheat the oven to 325°F, and line a baking sheet with a silicone baking mat or parchment paper.
Using a spoon and spatula, dip the cookie dough to 15 rounded scoops onto the prepared sheet, and flatten to the desired thickness and width by means 30 Vegan Cookie Recipes Without Margarine or Egg Replacers of a spatula. Bake in 325°F for about 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.
Notes: It is extremely important to quantify both the oats and flour properly utilizing this method or even a kitchen scale. (? That's exactly the one I own and love!) Too much of either will dry from the biscuits and render them cakey instead of chewy.
Immediate oats are also referred to as quick-cooking or moment oats. They arrive in large canisters, just like conservative oats. They are not the ones at the small flavored loaf of bread. To make your own, include the same quantity of classic yogurt into a food processor, and pulse 10-12 days or until the oats will be about 1/4 into ? of the original size.
For the fermented flour, I suggest the following blend: 1/2 cup (60g) millet flour, 2 tbsp (15g) tapioca flour, two tablespoons (15g) brown rice bran, also 1/2 tsp xanthan gum. Most store-bought gluten-free flour blends (like that one!) Will also do the job, if measured like this.
If your raisins are old, dryer, and not too plump or succulent... Add them to a microwave-safe bowl, and put water on top till they're completely covered. Seal plastic wrap over the top, and microwave the bowl on high for 1 second. Should you allow the raisins sit while mixing together the cookie dough, this little trick hydrates them they're really soft and succulent!
